Acacia honey from Ahrens apiary. Acacia honey or more precisely robinia honey (false acacia) is harvested by beekeeping in Saxony-Anhalt. The real acacia grows only in Africa and in Hungary but that is too far for us ..... The flowering time of the acacia is right after the rapeseed flower, the acacia trees impress with a white "dress" of flowers in good years, at high temperatures the air fills with the scent of acacia honey and the bees can in the short period of flowering ( fly about 5 days) from morning to late and collect high yields of acacia honey. Acacia honey stays liquid longer due to a high fructose content. It has not been possible to separate the acacia honey from the rapeseed honey. Often 5% rapeseed honey is enough to crystallize the acacia honey. Pure acacia honey is almost transparent with a slight green tinge, when it becomes firm it is white with a light gray color. Acacia honey tasted very mild and is very popular with tea drinkers but also for baking, cooking and for example. Acacia honey is very suitable for salad dressings.
